Black cardamoms are dried by heat treating on a fire pit or other means where as these fresh green cardamom pods are harvested before maturity, to be used whole, without any further processing. Green cardamoms can be used to flavor sweet and savory dishes where as the smokey flavor of black cardamom limits its use only to savory dishes!
